Rainbow Cupcakes

At the request of friends on facebook, here are the instructions for the fabulous rainbow cupcakes!
These are so cute and fun to make. I was inspired by a friend of mine who did this for her daughter's 2nd birthday. I knew then that my girls would get a kick out of them and so would I.
The picture below are taken from 2 different batches. The first batch, which are the last 3 pictures, we used red, green, blue, and yellow. The second batch, which are the first 4 pictures, we used pink, purple, blue and green.

First, take a white cake recipe or use a box cake. I used a boxed cake. Mix according to directions.

Divide evenly into bowls. You can use any amount, I used 4.

Put a little food coloring in each. Use the gel. If you use the liquid, you need to reduce your liquids in the cake mix. If you use red, get the "no taste" red. I didn't and I could tell. Red dye has a bad taste.

Put one heaping teaspoon full of each color in the cupcake tins. Do not mix. Bake.

And TaDa!!

Ice. I think white icing is awesome. They look like they are plain...

...and then you get a sweet surprise when you bite inside.
